Talking to a couple of people before Christmas made me remember some of the difficulties students face moving out of home for the first time and making sure that they eat properly. Getting a well balanced diet on a budget is an important part of staying healthy. It can be difficult to making the most of your student loan, particularly towards the end of term. So this is the first of an occasional entry suggesting a simple recipe that my keep you and your house mates going through hard times.
Chilli (Homer Simpson’s favourite)
For 4 people
Ingredients
1 large onion
500g mince (or soya mince)
2 tins of chopped tomatoes
Dollop of tomato puree
Hot chilli powder
1 tin of kidney beans
Method
- Dice the onion and fry off in sunflower oil for 5 minutes in a large pan
- Add the mince and brown for 5-10 minutes Add chopped tomatoes, puree…stir and cook for a further 5 minutes
- Add as much chilli powder as you dare and stir
- Add kidney beans and any of the optional ingredients
- Turn the heat right down to minimum on the smallest ring on the hob and put the lid on the top
- Cook for an hour, stirring every 10min or so
- After an hour, take the lid off and leave cooking for another half hour to thicken.
Serve with rice . or Jacket Potatoes. A perfect winter warmer which requires absolutely no cooking skills at all.
